Energy Mix
This energy mix is perfect as a quick and healthy snack. It’s delicious, satisfying, and energizing thanks to the healthy fats and proteins from the nuts and seeds, paired with sweet dried fruits.
Ingredients:
1 cup sunflower seeds
1 cup walnuts
1 cup soaked dates (soaked in warm water for 30 minutes and drained)
1 tsp cinnamon
½ tsp ginger
Pinch of salt
½ cup raisins
½ cup dried cranberries
¼ cup crushed cacao nibs
1 cup coconut flakes
⅓ cup goji berries
Instructions:
Soak the sunflower seeds and walnuts in filtered water for 4 hours. Rinse and drain well. While they are soaking, prepare the date paste: blend the drained dates with the cinnamon, ginger, and salt until smooth.
Place the nuts and seeds in a bowl, add the date mixture, and mix well until everything is fully combined.
Let the mixture dry out for about 12 hours, or until fully dry and crisp (sometimes it may take longer). Once completely dried, break the mix into pieces and stir in the remaining ingredients. Store in a glass jar.
